Since the flights with Iberia are routed via Madrid you may consider to skip the last leg of your return flight and end your trip in Spain. However we recommend this solution only in case of you travel with hand luggage only. First leg of your outbound flight to South America can not be skipped ortherwise your air ticket would be voided.
